We created Community Starter because we believe good food has the power to connect people—to the land, to one another, and to the rhythms that nourish us.

Feeding Your Starter

Keep your starter refrigerated when not in use.

Once each week:

• Keep ½ cup starter
• Add ½ cup flour
• Add ¼ cup water
• Stir until smooth
• Return to the refrigerator

Before baking, feed your starter and leave it at room temperature for 4–8 hours until bubbly and active.

Simple Sour Dough Bread

Ingredients

½ cup active starter
1½ cups water
4 cups bread flour
2 teaspoons salt

Instructions

  1. Mix starter and water.

  2. Add flour and salt and stir until combined.

  3. Every 30 minutes, come in and stretch and fold the dough. Do this 3 x then,

  4. Cover and let rise until doubled, about 6–8 hours or refrigerate over night.

  5. Shape into a loaf.

  6. Let rise another 1–2 hours.

  7. Bake at 450°F for 35–40 minutes.

Cool completely before slicing.

Frequently Asked Questions

What if I forget to feed my starter?

Don't worry. Most starters are more resilient than they look. Feed it as usual and give it a day or two at room temperature. In most cases it will bounce back.

Can I share this starter?

Absolutely. In fact, we hope you do. When your starter grows, give some to a friend, neighbor, family member, or fellow bread lover.

What if I see liquid on top?

A layer of liquid (sometimes called "hooch") simply means your starter is hungry. Pour it off or stir it in, then feed your starter.

How do I know it's ready to bake with?

A healthy starter will become bubbly, rise after feeding, and have a pleasant tangy aroma.
